Cheesy stuffed bell peppers with mushroom and chilli

Evenin' all - how's it hanging?


I thought I'd bring you one of my favourite "I want something delicious to eat, but I don have time or money for it" recipes.
I love stuffed bell peppers - the peppers themselves are cheap, and if you're serving for two, you only need about two to four peppers.
For stuffing - well, that's pretty much up to you! I don't eat meat, but if you like it, it's easy as well - only takes a little bit longer.


However, I like them "all vegetable" so what I do is stuff them with mushrooms, a little bit of chilli and of course, the "magic ingredient" : Cheese!
Here's what you need:

  • 2-4 bell peppers (any colour will do)
  • 6-8 mushrooms
  • chilli - as much or little as you want
  • grated cheese - cheddar or pizza topping is perfect!
Cut the peppers in half - remember to leave the stalk, or else it won't work as a "bowl" for the other ingredients.
Cut the mushrooms into small pieces as well as the chilli and add it to the hollow pepper.
Add a little bit of cheese and bake in the oven for 15 minutes on 400 F ((or 200 C)). Then take them out and add more cheese - as much or as little as you want - and bake for further 10 minutes.

Take them out of the oven and let them cool for 10 minutes before serving.
They work great both as an appetizer or an actual meal.

A yummy yummy DIY: Home made coffee syrup

Hello rainy Tuesday!

Over the last couple of weeks, I've gotten into the habit of visiting this charming little coffee house we have here in town.
It's called Kaffekilden, and it's basically Roskilde's equivalent to the TV show "Friends'" Central Perk.
It's filled with old furniture, cozy nooks and delicious cups of coffee.
It's beginning to be an expensive habit of mine, but I'm hooked now
- there's nothing like getting a quick cuppa joe and a ciggy with friends after class.

Well anyway, since this new "tradition" started, I also developed the habit of using syrup in my coffee.
I'm pretty hooked on it by now, and since I also drink several cups of coffee at home, I thought:
Why not make the coffee syrup myself?
It's a fun little project, and you can make it with any flavour you want.
I am a huge cinnamon fan, so of course that's what I used in mine. However, you can choose yourself
- why not try vanilla or caramel?

Ice mocca is deleciousness on a HOT Summers day

My my my, it's been a while, hasn't it?
I've taken a little blogger break for about two weeks, while I enjoyed a nice and relaxing vacation by the Swedish countryside. Now I'm back in my way too hot apartment and I'm ready to get back to blogging.

As I said, it's just way too hot! I've opened all of the windows and my front door, trying to let some fresh air in and cool the place a bit. Outside it's about 90 degrees (or around 30 degrees celcius), but inside it feels like a lot more.
As an avid coffee drinker, I can't go a day without that sweet taste of grounded beans, but it seems impossible to enjoy a hot cuppa joe in this weather. Well, I'm very happy to announce to you, that the ice mocca season has started! - Well, I suppose it has been here for a while, but at my house, today is officially the first day of ice mocca making.

I can honestly say that I make a pretty decent - dare I say totally awesome? - tall glass of chilled ice mocca.
It doesn't take a degree in science to figure this out, but still; I thought I'd share the recipe with you today.
It's terribly simple; just
- make a strong pot of coffee
- pour it in a blender and add 20-30 ice cubes
- also, you should pour some skinned milk in as well (as much or as little as you like)
- ... and blend it all together; make sure all of the ice cubes are crushed

Then just pour it in a tall glass and - if you'd like (I do this every time) - add some chocolate sauce and stir.

Happy Day!


How can it be anything else but a happy day today?
Maria's just left; we've had such a lovely couple of hours together today.
It's been a while since I've seen Maria - we've both been busy busy busy with exams. But as mine ended last Friday, I'm now officially on Summer break. Anyway, Maria had her Art exam today, and when she was done, she came by my flat for a couple of hours.
As you can see, I thought I'd spoil her - and me - a bit, and therefore I'd made ice coffee with vanilla ice cream (it's like 90 degrees outside today), sliced up a honey melon, put some biscuits and chocolate on the table and I'd made a little ice cream dessert with sorbet and melon.


After we were done getting chubby, we went outside on the terrace and enjoyed the blazing sun and some ice cold water with lime whilst listening to music.

Such a happy day!

Home made black pepper ginger tea

It's getting so hot here in Denmark. It's like we've had this cruel Winter, about 4 days of Spring and now we're in the middle of Summer! It's so hot these days, that going for a run in the late afternoon leaves you covered in sweat when you get home. But still, it's manageable - for now at least!
Anyway, even if it's hot out, there's nothing like the feeling when the sun has gone down and it gets a little chilly. No matter what time of year it is, I can't go to bed without a cuppa tea, but I refuse to buy anything else but the organic brands like Yogi and Celestial. My favorite tea of all time is Yogi's "Ginger", and then it occurred to me - why not make it myself? So that's what I did!

Today I'll show you how to make your own Black Pepper Ginger Tea - there's nothing like it; when you've made it yourself and actually know what's in it.

Here's what you'll need:
Some whole black pepper corns
One or two big ginger roots
And some loose tea-filters - you can get them in any grocery store, they're very cheap and you get lots!


And here's what you do:
Grade the ginger roots and place them on a big plate or what have you.
Let the dry off for a day or two, so that they are completely dry and crisp. It's important that when you place the graded ginger roots to dry, they don't "clump together"...


... After a day or two, the graded ginger roots should look like this. But make sure that they are completely dry before you go on and make the actual tea.


When you're sure the roots are dry, then you can start the fun process of making the actual tea.
Now, take the filters and fill them with the dry ginger and 4 or 6 whole black peppers corns - depending on how strong you want the tea. Remember that ginger already has a kind of peppery taste, so you might not want to put so much pepper in the tea bags.
When the tea bags are filled, cut off the long end, tie a string around it and make some cute tea-tags.


And now you're ready to drink a delicious cuppa home made Black Pepper Ginger Tea

Home made marinated feta cheese

Today I'm going to show you how to make your own home made marinated feta cheese.
This is terribly easy, and feta is not the only thing you can marinade like this. There's a whole bunch of things this works with, for example olives, chilli or garlic.
This is what you'll need:

You'll need some feta cheese (or whatever you'd like to marinade),
A big seal-tight glass jar
And olive oil (you'll need a lot of it, and the better the olive oil is, the better the end-result will be)

And here are some ideas for marinating ingredients:

Whole black peppercorns
Fresh dill
Fresh rosemary or thyme

And now here's what you do - it's so simple:
Slowly fill the jar with feta (or olives), and then for every layer you add the marinating ingredients
- I used whole black peppercorns and rosemary.
Fill the jar, and then when you're done, slowly add the olive oil. It is very important that you fill the jar with olive oil, so that it covers the feta completely.

Some people say that you don't need to keep the jar refrigerated, but then you should remember that the feta - or olives - can only keep for about two days. What I do is, that I put the jar in the fridge. Not only is it nice that the feta is cooled when you eat it, but also, if refrigerated, the jar of feta, olives, chillies or garlic can keep for up to two weeks.

Yummy yum-yum: Red apple iced tea (with caramel rum)

I don't know about the rest of the world, but here in Denmark, the weather has changed drastically - over night, actually. Just a couple of days ago, it was what I call "London Weather" - you know, the kind of weather that bids grey skies with rain and damp weather - so much so that my hair expands from normal size (well, my hair is never normal size, a it is quite big) to almost triple the size with curly ends and a not so fortunate look to be carrying around for the rest of the day. Almost like a bad wig, haha.
Anyway... the day before yesterday, yesterday and today the weather has been fantastic. Actually, not Spring weather but actual summer weather with 68 degrees outside. Actually yesterday, I wore my summer ensemble of hippie inspired clothes and sandals today, going to the dentist.
On my way home I stopped at a street grocer and bought a couple of kilos of apples, and that's when it struck me that I would attempt to make yet another home made organic iced tea - and you can add rum to it! You can make this in a big pitcher, or as I like to do, make it in small glass jars and serve them with vintage straws.

If you're making 4 jars of home made apple iced tea with rum, you'll need:

4 glass jars - best in a medium to a large size
4 big, red, organic (if you want) apples
4 small cinnamon sticks
4 organic apple tea bags - I prefer Celestial's "Red Apple"
And then you'll need some organic maple syrup and, of course, rum
- whatever kind you prefer, but I could imagine that a caramel flavoured rum would go fantastic with this drink 

And here's what you do - it's the easiest thing in the world:
Boil some water, and while it cools, slice the apples in very, very thin slices. 1 apple per jar will suffice, but you can always add less or more, depending on how much flavour you want.
Then add a cinnamon stick, a tea bag and a big teaspoon of maple syrup to every jar.
Add as much or as little rum as you want, and then just add the water.

Let the jars sit in the fridge for 24-48 hours, take the lid off, add a vintage straw and serve the drinks to your guests
- voilĂ ; a fantastic drink for a fantastic party outside in the sun!

Do it yourself: Peppermint iced tea (with vodka)

It looks like Spring is finally here to stay - and you know what that means: It's getting hotter and lighter out from now on! Which makes for the perfect outdoor parties.
So why not try to do a little something different for your guests? A great way of adding a personal touch to the drinks is to make them yourself. This peppermint iced tea (with vodka, if you prefer) is a light, cool and refreshing drink for a warm evening, and it's the easiest thing to make.

All you need is:
Peppermint or green mint tea
A few fresh mint leaves
A sliced up lime
And, if you want to make it an alcoholic beverage, vodka or apple wine

This is very very easy to make, and it only takes about five minutes or so.
Just boil some water and let it cool off for a bit, so that the glasses or jars don't break.
Then add the minted teabag (if you can't find mint tea in your local grocery store, then try looking in health stores or a tea shop) and the fresh mint leaves. Slice up a lime and put 1 or 2 slices in each glass or jar, and then, if you want to make the drink an alcoholic beverage, add some vodka or apple wine.
If you don't want to make the iced tea an alcoholic drink, but rather just a cool refreshment, you can also add a little non-alcoholic apple or pear cider - it gives the drink a bit of a zing!
Then just pour the boiled water in the glasses and put them in the fridge for an 2 or 3 hours.

And that's it! Now go enjoy the sun and have a great Saturday

Home Made Apple Sweet Icetea

A little late night blog posting never hurt no one, right? :)

The reason I'm writing late today is that all day I've been with Maria at Roskilde University for an open house. She's facing the uncomfortable choice of choosing where to study after VUC, and so when she told me that she was going to the open house at the university I'm planning on studying at in 2014, I afsked if I could come with her and check out campus for myself. Long story short, I'm so exited to go there when I'm done studying at VUC.

Anyway, bla bla bla, right? What I really wanted to show you today was this very nice tasting (and also nice looking) home made apple sweet icetea that I made yesterday and served earlier today when Maria and I came home from university and grabbed a ciggy outside in the sun.

There's nothing to this; all you need is apples, brown sugar, a mild tea (I used the organic brand Yogi's "Womens Tea") and, if you want, a pair of glass jars - you can get them for 2 or 3 bucks in most grocery stores.

  • Boil some water and slice up 1 apple in real thin slices and put half a sliced apple in each jar
  • Let the water cool of for 10 to 15 minutes so the jars won't break due to the heat of the water
  • Put some sugar cubes and a mild tea bag in each jar - side note; at this time of year, I prefer to use brown sugar in my home made iceteas, since it gives the drink a more "vintery flavour"
  • And then all you need to do is add water to each jar, put them in the fridge overnight and voilĂ ; home made apple sweet icetea served in a super nice way!

Home Made Organic Cinnamon and Apple Ice Tea With Honey

Yesterday I bought two new glass pitchers with the idea in mind, that I wanted to make more home made organic ice tea. I made a lot of it back in the summer, but as the weather turned colder, I kinda stopped craving that sweet and ice cold drink. But when I looked through the catalogues and saw that there were glass pitchers on sale for 4 bucks, I couldn't resist.
And so I've just made me some lovely ice tea. It's an organic cinnamon and apple ice tea with honey, which just tastes so fantastic, and is very fitting for cold weather - I think it's the cinnamon that makes it taste more "wintery".
Anyway, it's very easy to make; all you need are some apples, some cinnamon tea and a little honey.
I prefer to do this with only organic ingredients, but you do what you prefer.

Pour some water in the kettle and turn it on. While the water is boiling, cut up 3-6 apples and throw them in the pitcher - or whatever you're using. Pour the boiling water over the apples, add some honey - as much or little as you like - and then a bag or two of cinnamon tea. Let it sit in the fridge for about 12-24 hours, then filter out the apples and voilĂ ; a nice and lovely cool winter drink for winter weather

Hjemmelavet Chili Snaps


If you're wondering what the title of this post means, it says "Home Made Chili Schnapps".
Last week I found a nice recipe for making home made schnapps with chili and brown sugar.
I don't drink, but I thought it would be fun to make and also would be a great extra Chrostmas gift for my parents.
Here's what you do:
(You can also do this with Vodka)

Pour the schnapps (or vodka) in a big, clean jar or glass bottle.
Make sure there's enough room so you can add the ingredients and the alcohol won't pour over the edge.

Take two chili peppers and cut them all the way through. Then remove the seeds.
Now drop the chili into the alcohol. (If you want it extra hot then add more chili peppers.)

Now take two small cups of brown sugar and add that to the mix.

Now close the jar or bottle very tight and put it somewhere dark - for example the fridge or somewhere chilled.  

Let the mix of alcohol, chili and sugar do it's own thing for 4-7 days.

After about a week, you should shake the jar or bottle for about a minute so the last sugar mixes with the rest.
Then filter out the chilis and pour the mix in a new, nice and clean bottle.

For the last finishing touch, add one last whole and uncut chili to the mix.
Put a nice label on it and maybe a bow, and wupti-la-di-da; you have a nice and cheap home made present for someone you love.

Night Time Posting

Hello and good evening all you lovely people.
Apologies for the gaps in posting this week, but as you know, I'm on holiday in Sweden at the moment. It's so lovely being up here, although it's not all fun and games. But threat not, it's not as bad as it sounds.
Although I've been, what seems a bit like, slaving over a lot of my German homework, yesterday I finally - finally - managed to get it all done. For the past 5 or so days, I've been reading about 70 pages in German, but I do feel I'm loads better now. And the best part is, that now that the assignments for the next 3 months are done, next time I have a due date is in February. Pretty totally awesome.

Since I've finished my homework, I had a lot more time to help my mum and dad around the house. It all looks pretty idyllic from the outside, but let me tell you; it's a lot of work! The house was build in 1915 - we think - and despite almost a 100 years have gone by, there's still no running water in the house. But we manage, and get water in town. We do, however, have electricity. That really comes in handy every minute of the day. Like today.
We have two fireplaces in this house, which basically warms up the whole house. And since we have forest as far as the eye can see, we also have wood for the fireplaces. Or do we? That wood needs to be chopped, and that's what I've been doing today. I remember "back in the day" when we didn't have electricity in the house. Not alone did I have to go without internet - scratch that - my computer (as the battery ran out pretty quick) but when we needed to do chores, like chopping wood, it needed to be done by hand. Quite a bitch. Today we have the splitter, which makes things so much easier.
And that's what I've been doing all day. With dad. However, I had a Harry Potter audiobook in my ears, so it was quite fun actually.
Tonight, however, has been loads more relaxing. My mum and dad have had the neighbours by for dinner, so I've been in my room having a lovely time - as pictured below. I've watched a couple of movies, had endless cups of coffee and cigarettes, and I've eaten a gigantic piece of blueberry cake.
All in all it's been a very nice day, and I though with my recent blogging absence, that I'd let you in on it.
